Super Simple Sponge Recipe
This isn’t a fancy recipe. It isn’t a Bake Off Showstopper recipe. And, it certainly isn’t an arduous labour of love that will require your blood, sweat and tears. It is, however, an excellently tasty, fluffy and light sponge recipe that you can whip up in a few minutes flat. It works for cupcakes, big cakes, loaf cakes; lemon, chocolate, vanilla. Whatever you like. Super simple, super easy and super important to have loitering at the back of your mind for when you need to cook up something quick.
You can double, triple – or, heck – even quadruple this recipe to your heart’s content (I don’t even know how many times I multiplied this to make that glorious rainbow cake photographed up there). And if you want to make it chocolate add 2 tbsp cocoa for every 100g of flour; lemon – 2 tbsp lemon juice and the rind of half a lemon. Easy peasy.
100g plain flour
2 tbsp milk
1 tsp vanilla extract
1 tsp baking powder
Preheat oven to 175.
Cream together the vanilla, butter and sugar until light and fluffy.
Add the egg and sift in the flour, salt and baking powder (cocoa or lemon at this point too) then mix together.
Make sure the batter is mixed until it’s light and creamy and if you’re adding a colouring this is the time to do it.
Pop into the oven for 20 – 30 minutes until risen and golden brown. You should be able to pop a skewer in the sponge and have it come out clean. And that’s it, voilà! Beautiful spongey sponge.
